This gorgeous agricole style rum was distilled from 100% "Java" Sugarcane juice from the high altitude village of Santa Maria Tlalixtac. Max Krassel emigrated to Veracruz in 1917 and made his way to the mountainous Canada region of Oaxaca. It wasn't long before Max began distilling, designing and building his own still. His grandsons, Axel & William, have continued the family business and brought it into the new century. The Krassel family has been distilling rum for over 100 years. The organic hand harvested cane is transported from their fields by donkey. It's crushed on site and fermented naturally for up to 10 days in outdoor stainless steal tanks. Distilled on the custom built "Krassel" still, it's bottled at still strength of 53.7 (batch #cb12-21).
