Milk & Honey is a distinguished distillery originating from Tel Aviv, Israel, and it stands as a pioneer in the country's burgeoning whisky industry. Established in 2012 by a group of passionate whisky enthusiasts, the distillery was born out of a desire to create high-quality, locally produced single malt whisky. Drawing inspiration from the rich, diverse culture and history of the region, Milk & Honey embarked on a journey to craft a spirit that would reflect the unique terroir of Israel.
From its inception, the distillery has emphasized innovation and precision. It enlisted the expertise of the late Dr. Jim Swan, a renowned whisky consultant, to ensure the highest standards in production. Milk & Honey's commitment to quality is evident in their meticulous process, from sourcing the finest ingredients to employing traditional copper pot stills. The distillery uses 100% malted barley and ages its whisky in a variety of barrels, including ex-bourbon, ex-wine, and custom-made casks, allowing for a rich and complex flavor profile.
