Balcones Distilling, located in Waco, Texas, is a trailblazer in the world of American craft whiskey. Founded by Chip Tate, Balcones began its journey in a small, repurposed welding shop with a passion for creating something unique. The distillery's name, "Balcones," is inspired by the Balcones Fault, a geological formation in Texas that mirrors the distillery's rugged yet refined character. From the outset, Balcones set out to create whiskies that would stand apart in both flavor and craftsmanship, utilizing locally sourced ingredients and custom-built copper pot stills.
Balcones is perhaps best known for its Texas Single Malt, the first single malt whiskey made in Texas, which showcases the distillery’s dedication to quality and its innovative spirit. Unlike many traditional American whiskies, Balcones Single Malt is made entirely from malted barley and aged in the intense Texas climate, where the drastic temperature fluctuations create a whiskey with deep, rich flavors that are both complex and robust.
In addition to its Single Malt, Balcones has developed a diverse portfolio of award-winning spirits, including Brimstone, a smoky whiskey made using Texas scrub oak, and Baby Blue, the first-ever blue corn whiskey.
