Batch 007 is the next iteration in our series of highly aged blends that are predominantly 20+ year corn with high teen rye making up the secondary grain. The whisky is a blend of two 22 year old corn components, a 24 year old corn component and an 18 year 11 month old rye. It is our oldest whisky to date. Despite its 131.8 proof, this whisky is creamy and easy going. The nose expresses caramelized lemon peel torched onto creme brûlée. There is a mix of candied pear and vanilla bean that blends with milk chocolate and caramel. The combination of oak tannin and molasses creates a crystallization effect of cinnamon and sugar on the palate that receives a hefty dose of peppery rye spice as it transitions into a long finish.
