During bottling of the well-loved Batch 006, Found North held back 500 liters for further maturation in a Spanish Oak Pedro Ximénez Sherry Butt. The original Batch 006 blend was composed of five component whiskies, ranging from 17-26 years. With an extra eight months in the sherry butt, Second Summit earned an 18 year age statement. The resulting whisky presents grape jam on a graham cracker with hints of dark chocolate and lovely pine needles, baked brown sugar cookie, and candied cashews. With roughly 100 cases produced, this whisky is on allocation. At Cask Strength of129.8 proof, non-chill filtered, natural Color, 18 Year Age Statement (blend of 18-26 year whiskies) finished for eight mornths in Spanish Oak PX Sherry, and a mashbill of 87% Corn | 12% Rye | 1% Malted Barley. It's definitely the most exciting Canadian whisky we've ever come across.
